Whether your refrigerator is barren or you just don't have the dinner prep in you, pasta alla poverella is an easy recipe composed of just three ingredients that you likely already have in your kitchen.
Eggs, Parmigiano Reggiano cheese and pasta
Pasta alla poverella, which literally means “poor man's pasta,” contains just eggs, spaghetti, and grated Parmigiano Reggiano. For the pasta, choose whichever variety you prefer – even egg pasta works well with the sauce.
Pasta alla poverella
Ingredients
12 oz. spaghetti pasta
4 large eggs
4 oz. Parmigiano Reggiano, grated
salt
pepper
extra-virgin olive oil
parsley, chopped (optional)
Note: If you appreciate a kick, add some crushed red pepper flakes.
Method
Bring a large pot of water to a boil. Add salt, then toss in the spaghetti and stir until al dente. Drain the pasta. In the meantime, drizzle a saute pan with oil and crack the eggs into it. Continue frying until the eggs are solid and evenly cooked. Then add a pinch of salt, pepper, and Parmigiano. Stir well, so that the eggs break open a little into the pasta. Finish with the chopped parsley (if you wish), and serve immediately.
