To impress friends and family during the summer season, we usually serve a dessert at the end of dinner, most often a tray of seasonal and tropical fruit – cleaned, sliced and ready to eat. And when you bring those fruits together into a single dish? What could be better? This simple recipe transforms the usual fruit into a mix of flavors, textures and even temperatures! That’s right: The grilled, warm pineapple is served alongside a scoop of cold ice cream, that will eventually melt into the heat of the fruit. A true delight that we recommend trying as soon as possible, especially because you need so few ingredients and hardly any cooking skills to make it!
The recipe for homemade banana ice cream
Don't have an ice cream maker? No problem! This ice cream is made without one. Just peel and slice a banana and transfer to the freezer in a plastic bag for a couple of hours. Once frozen, blend for a soft ice cream. Add some peanut butter to give it more flavor or some fleshy dates and thick coconut milk to make the texture more velvety, but it’s great as is too! For a chocolate version, add a spoonful of cocoa and some chocolate chips.
How to grill pineapple
Using a small knife or another tool, first remove the outer skin of the pineapple and remove the central section of the fruit (the hardest and tasteless part), which will leave a hole in the middle. Slice the pineapple and simply grill or sauté and serve. To add some flavor, first let the pineapple slices macerate in a little Cointreau or a good rum. Or you can brush it with melted butter and then cook after sprinkling it with brown sugar.
Assembling the dessert
For the best presentation of this dessert, place a slice of pineapple in the middle of a plate with a small rounded portion of banana ice cream in the middle. Decorate with semi-mounted whipped cream or whipped coconut milk (the kind in a jar) and complete with hazelnut or pistachio nuts and melted dark chocolate.
