Apple cake is a timeless classic, a cake that immediately makes you feel at home. And the recipe is always easy to make. When we think of apple cake, we usually image apple slices strewn over the top to decorate it, or little pieces of apple hiding inside it. But there’s an alternative way of preparing this cake, which will make you rediscover it with great pleasure. Try using grated apples, perfect for those who don’t like the texture of apple chunks. It’s also a way of getting a moister cake, thanks to the juices released from the apples when they’re grated.
The recipe for grated apple cake
Ingredients
5 oz flour, 4 oz sugar, 2 oz butter, ½ oz yeast for desserts, 3 eggs, 2 apples, Peel of 1 lemon, Powdered sugar to taste, Cinnamon powder to taste
How to
Beat the eggs with the sugar to get a soft fluffy mixture, preferably with electric whisks. Melt the butter and add it together with the lemon rind to the mixture, then continue working it.
Add the sieved flour and yeast, little by little. Peel the apples and grate them finely, then add them to the mixture, stirring gently with a spatula. At this stage you can add some cinnamon for flavor.
Pour the mixture into a buttered baking pan and cook for about 40 minutes at 355°F. Check the texture inside with a toothpick. When it’s ready, let it cool out of the oven and sprinkle with powdered sugar.
Variations on a classic
Grated apple cake is as good as it is simple, but you can change it creatively. Want some ideas? First of all, you can flavor it with orange peel instead of lemon peel, or use vanilla if you don’t like cinnamon. There are also those who can’t appreciate a cake unless there’s chocolate in it. The cake can be enriched with chocolate chips (also with raisins), combining them with the dough along with grated apples. Otherwise you can replace a small part of the flour with bitter cocoa. Another idea to get an original result is to replace one of the two apples in the recipe with two carrots, also grated. And why not enhance it with walnuts? Just chop them roughly and add them directly into the dough, or distribute them on its surface, for more crunchiness. Then, if you just can’t resist, decorate the cake with apple slices, placing them on top of the dough like in the classic recipe.
