Cooking recipes with coffee isn’t so easy... especially if it’s not a sweet recipe. But today, we’ve got an unusual and very tasty recipe to combine it with chicken! A second or main course with coffee and chicken is basically haute cuisine, right? Of course, the measurements of the coffee, and the accompanying herb selection, are both super important aspects of this dish. You should be able to taste the coffee, but it mustn’t override the flavor of the meat!

Which part of the chicken should I use?
It depends a bit on personal preference and the result you’re looking to achieve. If you have quite a few guests and the dinner is rather informal, we’d suggest thighs or wings to eat with your hands. If the occasion requires a little more “attention to detail,” then prepare it with chicken tenders. We don’t suggest using chicken breast for this recipe.
Accompanying pollo al caffè
This second course might be a little difficult to combine with a side dish of vegetables. For this reason, we recommend either classic baked potatoes or steamed seasonal vegetables. To complete the dish, add a small portion of black rice or basmati over which you’ll serve the chicken.
Coffee Marinated Chicken recipe
Start by preparing 5-6 cups of coffee and marinate the chicken in it with some ground pink and black peppercorns. Don’t use instant coffee, but choose a good quality Arabica blend if possible. If you like spice, add cardamom and a cinnamon stick to the peppercorns in the marinade.
After about 24 hours, dry the chicken with paper towels and cook it in a pan with oil, browning it on all sides. Filter the coffee sauce with a mesh strainer. In a separate pan, fry some minced celery, carrot, and onion. Then, add the chicken, a little vegetable broth, and milk. Let the ingredients cook over high heat for a while.
Then, add the filtered marinade and a pinch of salt. Let it blend with the sauce and then serve over the chicken. Complete the dish with sesame seeds and pink peppercorns.
