Crepes are always a great idea for a tasty snack, but also for breakfast or dessert. They are quick and easy to prepare and can be topped in many ways. Did you know that cocoa can be added to the basic recipe? Here’s how to do it plus some tasty ideas for an off-the-cuff filling, ricotta!
The recipe for cocoa crepes with ricotta cheese
Ingredients
For the crepes
2 cups whole milk, 3 eggs, 7 oz flour, 1 ½ oz bitter cocoa powder, 1 ½ oz icing sugar
For the filling
1 lb sifted ricotta cheese, 5 tablespoons of sugar or honey, cinnamon or chocolate chips
First sift the cocoa, flour and sugar and mix them. Separately, beat the eggs with the milk and then add them to the mixture of dry ingredients a little at a time, stirring with a hand whisk to eliminate any lumps. Heat a non-stick pan and grease it with a little butter, then pour the mixture one ladle at a time making it stick nicely and spreading it with the movement of the wrist. Cook one minute on each side. As you cook the crepes, stack them to keep them moist and then prepare the filling by simply mixing strained ricotta cheese with sugar and cinnamon.
How to serve cocoa and ricotta crêpes
You can simply spread the ricotta cheese in the middle of each crêpe and then fold it first in half and then again in half. Or you can make cannoli to obtain a nice contrast of color between the dark crepe and light filling. You can also make dumplings and then serve them on a melted chocolate base with a scoop of whipped cream on the side.
Cocoa crepes, but savory!
You can also prepare cocoa crepes in a savory version. Cocoa is an ingredient that lends itself very well to first and main course dishes. Just remove the sugar and add a pinch of salt to the mixture. As a filling always opt for a ricotta, but flavor it with a stronger cheese, always soft, like gorgonzola and add some rocket leaves to give color, and nuts for a bit of crunchiness. Cocoa doesn’t taste too invasive, but simply has a slightly bitter and toasted aftertaste, so you can combine it a bit with anything that you like, even grilled vegetables, smoked salmon and sour cream for a touch of freshness which is tasty.
