Okay, we’re not suggesting you make a cake with biscuits as the only ingredient… but this recipe is fun and original because it uses biscuits and some other ingredients, as well! There’s no easier cake to bring to a soirée; it’s also perfect for a birthday if you don’t want to go crazy with sponge bases or puff pastries! Kids go crazy for this recipe and success is guaranteed!
Striped slices
The peculiarity of this cake is in the cut. The biscuits are arranged vertically inside the cake pan, in pairs of two and stuffed in the middle. Once ready, the cake is left to cool in the refrigerator so that all the ingredients mix together and the biscuit soften enough to cut perfectly. You can also arrange the biscuits in horizontal layers like the classic tiramisu in a pinch, but we recommend the first option because the slices not only cut easier – but each slice features perfectly delicious stripes!
How to Make a Biscuit Cake:
With Mascarpone and Chocolate Cream
This version of the cake is made with dried biscuits that, when paired two by two and filled with a cream for flavor, come together to form a delightfully rich cake!
Here’s how: First, decide what taste and filling you’d like to use for flavor. We recommend the classic and uncooked recipe based on mascarpone and whipped cream. To make it, simply mix 7 oz of mascarpone with 6 tbs of whipped heavy cream. Add a tablespoon of cocoa and, if you like, a little honey. Spread a biscuit with hazelnut cream and another with cream and mascarpone and then pair them (about 18 biscuits for 9 pairs) as if they were sandwiches. Quickly moisten the biscuits “sandwiches” with coffee and milk and then place them vertically inside a rectangular or round, hinged mold. It’s important not to leave empty spaces. Start from the outside and slowly move towards the center. Once the base is completed, decorate with leftover mascarpone or with cream.
With Cream
You can also use a simple pastry cream to fill the biscuits and then decorate them with whipped cream. The important thing is that the cream is cold and compact enough. You can mix the pastry cream, if you prefer, with whipped cream or with ricotta cheese and flavor it with cinnamon to add a little extra taste.
With Jam
Kids also love the version with jam filling, decorated with butter cream made from spreadable cheese, icing, sugar and butter. And for the little ones, we always suggest wetting the biscuits with fruit juice if you’re using jam or wetting them with a little barley if you’re using cream or chocolate. If you’d like to serve the cake as a dessert for “adults-only,” add a little rum or brandy to the cream for the biscuits to soak in. For a children’s-cake-turned-gourmet-dessert, use bitter orange jam, dark chocolate flakes, Grand Marnier for the dip and walnut kernels with caramelized orange slices for decoration.
Tiramisu
Who can say no to a good tiramisu? Try this version of the cake with ladyfingers, using the cream of eggs and mascarpone as a filling like you would for a classic tiramisu. Wet with coffee and sprinkle with bitter cocoa.
